Abstract

 MECHANICAL PROPERTIES LIKE FIRMNESS, CRISPNESS, HARDNESS ARE IMPORTANT TO ASSESS FRUIT QUALITY. THESE PROPERTIES ARE CHANGED AFTER HARVESTING AND DURING STORAGE CONDITIONS. IN THIS RESEARCH 2 TESTS WERE TAKEN TO EVALUATE THE CHANGING OF MECHANICAL PROPERTIES OF CUCUMBER FRUIT DURING SHELF LIFE. THE TESTS WERE TEXTURAL AND UNIAXIAL COMPRESSION TEST. TESTS WERE TAKEN 1, 5 AND 10 DAYS AFTER HARVESTING. THE RESULTS SHOWED THAT FORCE-DEFORMATION CURVE FEATURES WERE CHANGED DURING SHELF LIFE. THERE ARE SIGNIFICANT DIFFERENCES BETWEEN FIRST, FIFTH AND TENTH DAYS AT 5% PROBABILITY LEVEL. SO THESE METHODS CAN BE USED AS QUALITY ASSESSMENT. DUE TO MORE VARIABILITY IN THE MID REGION OF CUCUMBER FRUIT IT IS THE BEST PLACES TO ESTIMATE THE TIME PASSED FROM HARVESTING.
