Abstract

 PHYSICOCHEMICAL AND NUTRITIONAL QUALITY OF FRUITS USUALLY CHANGES DURING STORAGE. IN THIS PAPER, CHANGES IN THE NUTRITIONAL QUALITY OF FRUITS DURING STORAGE WAS STUDIED. IN THIS STUDY, ATTRIBUTES THE DECREASE IN FRUIT WEIGHT, TSS, TA, TSS / TA, VITAMIN C, TOTAL PHENOLICS AND ANTIOXIDANT CAPACITY OF THE EXTRACT DURING STORAGE WERE STUDIED. CITRUS FRUIT DURING STORAGE IN FRUIT WEIGHT WAS SIGNIFICANTLY REDUCED HAPPEN. TSS DURING STORAGE INCREASED GRADUALLY REDUCED THE TA. CHANGES IN VITAMIN C AND TOTAL PHENOL CONTENT OF FRUIT DEPENDS ON THE AMOUNT OF STORAGE. THE RESULTS SHOWED THAT THE ANTIOXIDANT CAPACITY OF CITRUS FRUIT DURING STORAGE DECREASES.
