Abstract

 Natural products contribute in a great extent to the fight against pathogenic micro-organisms. Many plants or parts of them are used in food as spices and are thought to provide a natural conservation by inhibiting the microbial growth or to display some therapeutic activity. Plants have been also used as traditional medicines in many parts of the world for generations. Here, the following will be discussed: 1- Antimicrobial properties of plant extracts as whole, especially plants from Khorasan province, 2- Antimicrobial activities of phytochemically important plant products such as essential oils, alkaloids etc. 3- Plant products as a source of bacterial resistance modulator, as have been seen with galbanic acid derived from roots of Ferula szowitsiana. 4- Use of plants as preservative in different products including pharmaceuticals.
