DETECTION OF HISTAMINE LEVEL AND RELATION WITH MICROBIAL LOAD OF WHOLE TIGER CROAKER (OTOLITHES RUBER) DURING ICE STORAGE

Abstract

 In this study, the BIOGENIC AMINE HISTAMINE (BA) content of whole croaker (Otolithes ruber) was monitored during ICE STORAGE for a period of 18 days and related bacterial changes (psychrophiles and mesophiles) were studied every 3 days (0, 3, 6, 9, 12, 15 and 18th day). HISTAMINE was not detected in the first storage day by HPLC and this amine detected after 5 days. The best correlation (R2=0.98) were found among HISTAMINE and mesophilic bacterial load also showed significant variation (P<0.05) during ICE STORAGE. Initial concentration of HISTAMINE was 1.49 mg/g and finally reached to 14.21 mg/g when mesophilic bacterial load reached over 107cfu/g. The level of HISTAMINE seemed to be a suitable indicator of freshness of Otolithes rubber.
