Saffron is a native and Commercial Production in the South Khorasan Providence. It has Played a significant role in social and Economical conditions of This area in the past decades. But unfortunate no body Has done Special research project on this topic so far in this area.
The purpose of this study was to investigate and identify the role and the importance and affects of saffron on the social and Economical development in this area. The research area was two Counties located in Birjand the capital of this providence.
The research population of this study was all farmers who produce saffron in the abone two ecuntis.
The instrument for data collection included two questioners that Their validity was confirmed by panel of exports.
Samples for this research were selected randomly, 28 farmers from the Khousf county and 42 farmers from the central county.
The results are as follow: %94 of saffron producers were men. Their literacy level was low and %18 were illiterate.
The average of their caltivated saffron land was %36 Hectar.
Their average annul saffron production was %86 K.grams and Their average gross income was 347567 toman per–year.
Saffron was in the fourth place, among seven different common procuctions in the area, from gross income point of view.
Due to the recent course of drought in this area, the average production of saffron has been decreased from 5K. grams to 3 K.grams per hectare. Beside, the economic role of saffron as a source of income the farmers have indicated that they still continue producing saffron in spite of tis low price. Because they use saffron in their daily foods and have it as a gift production any way.
