A total of 36 samples including 12 samples of raw milk, 12 samples of skim milk and 12 samples of cream, were collected from one of dairy plant of Esfahan. All of the samples were analyzed according to the AOAC methods. The mean values for Pb and Cd in raw milk were 0.245±0.098 ppm and 0.032±0.007 ppm, in skim milk were 0.118±0.072 ppm and 0.15±0.009 ppm, in cream were 0.292±0.12 ppm and 0.31±0.005 ppm, respectively. The study showed that the level of Pb in all products of this dairy plant was lower than standard level, but 83.3% of raw milk showed Cd contamination higher than the standard level. Separation of fat milk from milk caused a reduction of Pb level in the product, but this process did not affect Cd content in skim milk and cream.
