Abstract: 

In this study, changes in fatty acid composition during embryonic and larval development of Big head carp Hypophthalmichthys nobilis were examined. Samples were taken from stages (fertilized eggs, yolk sac larvae, yolk-sac absorption larvae and before entering the pond). Analyses of fatty acid composition were performed by gas chromatography mass spectrometry. The results showed that saturated fatty acids (SFA) was significantly decreased during the embryonic period (P<0.05). Monounsaturated fatty acids (MUFA) were not significantly reduced during larval development. The results showed that omega-3 fatty acids and DHA during embryonic and larval development were increased and decreased processes, respectively. In total, saturated fatty acids in the embryonic period had energetic role and monounsaturated and polyunsaturated fatty acids had a structural role during embryonic and larval period.
